Oatmeal Peanut Butter Cookie Energy Bites with Chia + RAW CACAO NIBS
Do you wanna know very well what my eating routine was all last week? (Even though you don’t, I’m still going to let you know.)
Well, it’s fairly basic: Eating in the Whole Foods salad bar and shoveling these simply no bake oatmeal peanut butter cookie energy bites into my mouth area at an extremely fast pace.
From last week’s eating adventures, I’ve learned a couple of things: 1) It’s astonishing just how much you can spend on a salad bar AND 2) I absolutely plan on building these energy bites every week for the rest of summertime. Because once summertime has ended, it’s BAKING period (not it ever finished for me).
Initially I decided on making these as granola bars,but when I played with the consistency, they finished up working far better mainly because energy bites. And I have to admit, I’m a HUGE fan. These were an ideal pre-workout gas and basically an any-time kind of snack. Which girl’s surely got to have her snacks.
A great perk about these bites is that they’re freezer friendly. I in fact eat them right from the refrigerator because they’re still chewy and delicious and flavor like cold cookie dough that I wish to live in. I don’t know?
To make these bites more nutritious, I added in both chia seeds and raw cacao nibs. Both provide an excellent way to obtain nutrients including fiber, omega-3 and proteins, which is exactly the cause I known as these energy bites. And it’s an extra bonus that they actually do taste just like a giant offering of oatmeal peanut butter cookie dough.
I understand my love for peanut butter has gone out of control. Similar to my love for Justin Bieber. Uhhhh did I just state that? #belieber

2 1/2 tablespoons water
1 teaspoon vanilla extract
1 1/3 cups oats
2 tablespoons chia seeds
2 tablespoons cacao nibs
In a large bowl, stir jointly oats, chia seeds and cacao nibs. Set aside.
Add dates and water towards the plate of a food processor and course of action several times until schedules begin to breakdown a bit and form a paste. Next add maple syrup, vanilla and peanut butter; process once again until it starts to appear to be a wet cookie dough and substances are well combined.
Add damp ingredients to dry ingredients and mix using a solid wood spoon. I love to use my hands because it’s much easier to get everything combined well. I know it’s just a little messy, so my advice is to coat the hands with handful of coconut essential oil so the dough doesn’t stay. Once the substances are well combined, type into 1 inch balls. Store within an airtight box in the refrigerator. Balls can last for 5-7 days or could be frozen for a month.
If you’d like, you can always utilize mini double chocolate almond flour banana bread chips instead of raw cacao nibs, simply understand that the nutrition may be slightly different.
