Friday Eats-Fat Free banana bread!


Ok, lets face it…Summer is almost here and many of us are trying to shed a few of those winter pounds…or vacation pounds;) I don’t know about you, but there are only so many meals of grilled protein and brown rice I can take before I NEED a treat of some sort…I have the solution, a treat without the cheat!

This FAT FREE, yes, you read right, fat free banana bread recipe is satisfying and lovely with a cup of tea or part of your breakfast.  The addition of dark chocolate chips makes this seem like a real treat and leaves you feeling a little less deprived;)

Ingredients
  • 2 egg whites and 1 whole egg
  • 3 ripe bananas
  • 1/2 cup of apple sauce
  • sweetener of your choice, I like a few packets of Stevia, honey or agave syrup
  • 2 cups of oat flour (oat flour is finely ground oats easily done in a food processer)
  • 1 teaspoon baking soda
  • 1/2 teaspoon of baking powder
  • 1/2 teaspoon of salt
  • a handful of 60% dark chocolate chips (more or less if you like)

Directions
  • preheat the oven to 325 degrees
  • in a medium bowl, beat the egg whites and whole egg and add the remaining wet ingredients-mix thouroughly
  • in another bowl, mix the dry ingredients
  • lightly blend the wet and dry until combined and pour into a greased loaf pan
  • bake for 50 mins, once cooked, let it stand for at least 10 minutes before removing
